Southwest Chicken Salad Sandwich

Want something fun and different? Try this zesty southwest chicken salad sandwich!

 1 grilled, roasted or sauteed chicken breast fillet per sandwich
 1 tbsp mayonnaise
 ½ tbsp sour cream
 1 tsp lime juice
 ½ avocadochopped
 ½ bell pepperchopped
 4 slices of pickled jalapenosdiced
 1 green onionchopped
 ½ tbsp fresh cilantrochopped finely
 ¼ tsp cumin
 1 clove garlicchopped finely
 salt and pepper to taste

Chop the chicken into small cubes. Place in a small mixing bowl.


Stir in mayonnaise, sour cream and lime juice.


Add the rest of the ingredients, mixing ingredients evenly.


Chill the salad in the refrigerator for about an hour.


Once the salad is cool you can eat it any way you like. Wrap it in a tortilla. Put it on top of toast. Or use whole wheat bread and make a sandwich with it.


Lettuce or spinach leaves make a great garnish. I hope you enjoy this salad as much as my family and I do!
